How to Make Beet Kvass 

Beet kvass is a traditional fermented drink made from beets, water, salt, and an optional starter culture. The fermentation process allows the beneficial bacteria to break down the sugars in the beets and produce lactic acid, which gives the drink its tangy flavor and fizzy texture.

How to make Beet Kvass

Making beet kvass is simple and requires just a few ingredients. Here is a recipe to get you started:

Ingredients:

  • 2-3 medium-sized organic beets, washed and chopped, or enough to fill a wide-mouth glass jar about 1/3 of the way

  • 1 tablespoon sea salt

  • Filtered water

  • 1/4 cup of whey (if not available use vegetable culture starter, or 1 tsp of salt)

    • **rotate the type of whey you use (yogurt, kefir for optimal probiotic benefits)

Instructions:

  • Place the chopped beets, sea salt, and whey (optional)  in a 1-quart mason jar.

  • Fill the jar with filtered water, leaving about 1 inch of headspace.

  • Cover the jar with a tight-fitting lid and shake well.

  • Allow the jar to sit at room temperature for 2-3 days, lightly shaking & checking daily for any signs of mold or spoilage.

Once the kvass is ready, strain out the beets and transfer the liquid to a clean glass jar with a tight-fitting lid. You can reuse the beets one more time by adding more water, another TB of salt & 1/4 cup whey.

Store the beet kvass in the refrigerator for up to a month and enjoy a small glass before meals, or in soups & dressings.
